A Very Lovely Shepherds Pie with a Recipe

The other week Daddy made a Shepherds Pie for dinner. It was really lovely to have the night off from cooking, and for it not being something like Steak, Beefburgers or Pasta! It isn't that Daddy doesn't cook tradition meals, its just that normally when he does it's something that is quick and easy. If a meal needs ingredients that need peeling, chopping or a pan that needs de-glazing then its normally me that is in charge.

Top Ender, Baby Boy and I sat at the table waiting for the very lovely smelling pie to come through from the Kitchen and I even tweeted about it, because I was so excited about the meal! As Baby Boy and Top Ender ate everything on their plate I thought that such a great recipe should be shared and so I made Daddy tell me exactly what he had done in order so that you can recreate this comforting classic meal.



Ingredients

2 tsp Garlic puree
2tbsp Tomato puree
500g Lamb Mince
3 large Potatoes
1 carrot diced
handful of peas (frozen)
Mushrooms (frozen)
Salt
2tbsp butter
300ml stock
Oil
Handful grated cheese

Method

Heat the oven to gas mark 4.

Peel and cut the potatoes into large chunks, bring the potatoes to the boil and then leave them to simmer for 18minutes. Drain them and then return to low heat (to dry). Stir in the butter and then Mash.

At same time as boiling the potatoes, fry the Mince in oil until browned. Stir in the tomato and garlic purees and cook for four minutes over a medium heat.

Stir in the vegetable and cook for a further two minutes again over a  medium heat.

Stir in the stock and simmer for approx ten minutes which should be around the same time as the potatoes are done.

Put the mince into an oven proof dish and cover with the mashed potato.

Fluff the potato to make it look nice and then sprinkle cheese over the top. Cook for approximately Twenty minutes in the oven and if needs be at the end brown the cheese under the grill at the end.

Serve with extra vegetables and bread to mop up!
