Carrot and Oat Cookies

Every Sunday I try to bake something for the next week for us to snack on, I am on a diet though and I'm trying to teach my children healthy eating habits too so I try to make sure that everything we eat is healthy and tasty. I have a terrible sweet tooth and so I find that having something healthy and sweet like a carrot and oat cookie to have as a treat helps keep that in check. Plus it really helps to use up those carrots that are laying around!



Ingredients

2 Grated Carrots
5oz Oats
6oz Butter
6oz Sugar
5oz Plain Flour
1 Egg
Lemon Rind from 1 Lemon
1/2 Teaspoon Salt
1 Teaspoon Baking Powder

Method

Cream the butter and sugar before beating in the grated carrot and the egg and mixing together until smooth.

Add the rest of the ingredients and stir until everything is well mixed and distributed.

Place teaspoons of the dough onto a greased baking tray and bake at Gas Mark 5 for 12-15 minutes.

Take the cookies off the baking tray before they are fully cooled and store in an airtight container or freeze for putting in lunch boxes for unexpected treats.



They really are lovely and because they have carrots and oats in you can pretend that they are uber healthy!
