What We Are Eating This Week W/C 3rd September 2016

I've been thinking a lot lately about eating more healthily, about eating cheaply (or frugally) and about going to more than one Supermarket. Normally I'm a loyal Tesco shopper. Occasionally popping to Morrisons, Asda, Sainsburys, M&S and Waitrose for Gluten free bits or things that I've seen that are on offer or that I prefer the different own brand supermarket version of.

As I said however, I'm trying to change the way we eat again, so please tell me what your best frugal and healthy meals are, where you get the best priced and quality ingredients from and other secrets about meal planning that you know and I don't!


Saturday - Loaded Hot Dogs


It's been ages since we had loaded Hot Dogs and so I thought that we'd have it today. We have some really lush toppings planned, onion, cheese, salsa, bacon bits etc. The Children tend to have plain hot dogs, but I'm pretty sure Tops will go with some bacon and Dan Jon will go with BBQ sauce and possibly some cheese.

We will cheat a little and rather than have hot dogs, we'll go with some Pork Sausages. I get some great ones in Tesco that are Gluten free and have no filling


Sunday - Chicken wrapped in Bacon


When we were out for our meal last Monday, Top Ender requested that we have Chicken wrapped in Bacon for a meal soon. I was in a super mood (my meal was AMAZING!) and told her we'd make sure to have it that Sunday.

So we're having it today, with peas and roast potatoes and yorkshire puddings because what Sunday meal would be complete without roast potatoes or yorkshire puddings?

Meatless Monday - Quorn Ground Beef Pizza


The Children are back at School today and I have the pleasure of having Flyfour at home with me today too (he likes to be here the morning of the first day of a new School year). I wanted to make something really great to "celebrate" the first day back at School and of course I wanted it to be Meat Free (as it is Meatless Monday) and Gluten Free and tasty.

So I decided to make Pizza with quorn ground beef and onions and peppers on top. Hopefully everyone else will like it. And if not? Well tough it's what they are getting.


Tuesday - Salmon Stir Fry


I was thinking about doing some kind of fish dish and I thought about doing a fish dish with some rice, but I really love there being lots and lots of veggies, because then it fills you up, they are healthy, tasty and veggies and cheap!

Wednesday - Chickpea Curry


I thought that Tops and Flyfour would like this, plus if I make it mild then Dan Jon Jr will like it too.

I'm going to add a pudding that Dan Jon will like as an additional bribe, I just need to find out what it is that he wants. I have a feeling that if I also add a Cream Soda float that he'll love whatever I serve him.

Thursday - Tuna Melts or Tuna Pasta Bake


We had two options for our meal this evening and to be sure I'm still not sure which one we're going to go with. We will either have Tuna Melts (toast, tuna, cheese and slices of tomato which no doubt the children will complain about) or low carb Tuna Pasta Bake.

The Tuna Pasta Bake is low carb because the pasta amount is halved and cauliflower is added in to bulk it out. It's tasty and means I don't have to chase Dan Jon Jr's blood sugars all night too!

Friday - Chicken Fajitas


The Children and I are on our own tonight as Flyfour is off gallivanting again at a proper work thing (all weekend) so we decided to have something yummy and fun. After my meal from last Monday of Duck fajitas, I thought we'd have chicken fajitas tonight. I had said we'd have it without wraps to start with because I forgot Flyfour wouldn't be here!

Anyway, we quickly realised our mistake and so I'm planning on getting some lovely wraps for us three and if I'm lucky the children won't notice that I accidentally add plum sauce to the wraps and make a Chinese Mexican hybrid.

So that's what we are eating this week. How about you?
