What We Are Eating This Week W/C 5th September 2020

I can fast see this blog becoming a once a week update of my meal plans. I have been concentrating so much on my podcast About Ten Minutes With PippaD that I just haven't been able to keep up with blogging and my job and keeping the house clean and tidy... Maybe I'll give up on that last one!

Anyway, here is what we are eating this week and I promise to do better at sharing my thoughts and ideas here as well as my on weekly podcast!

Saturday - Come Dine With Me Final!

So, it's my meal today. I'm doing an Italian theme and will have meatballs and spaghetti as my main, antipasto as my starter and baked pears as my desert. I'm looking forward to it, although I think Flyfour's amazing meal last week may have won the competition!

Sunday - Sunday Roast

I've asked Flyfour to decide what we will eat this week for our Sunday roast, I think it will be chicken because that's his favourite to cook.

Monday - Vegetable Crumble

I used to make Vegetable Crumble all the time, I loved it and Flyfour ate it so it couldn't have been too bad! I thought I'd make it again today, so that the children can try it and decide if it is something that they enjoy as if it is, it can be added to our meal plan again in the future!

Tuesday - Pizza Jacket Potatoes

Dan Jon and Top Ender are back to school today. I don't count the one day she went last week as it was more of an introduction in my book!

I'll put the Jacket Potatoes into the Slow Cooker before I go to work, and they'll be nice and soft and ready to eat when I get in from work. I'll then add slices of tomato, some vegan cheese and other toppings that the children favour on top and let them melt a little so that we have pizza potatoes!

Wednesday - Tuna Vegetable Pasta

A quick and easy meal tonight, that I can throw together when Top Ender and I are back from Brownies. Just boil some pasta in some stock, throw in some tuna and some of the tomatoes from the night before along with some peppers and spinach and I'll call it good.

Thursday - Vegetable Curry

It's been ages since I've had a vegetable curry, so I'm making one tonight. I throw potatoes, cauliflower, broccoli, peppers, spinach, peas and onions and whatever else I have around into the slow cooker and let it cook away with my herbs and spices and plenty of tomatoes.

I'll serve it with rice and naan bread, as we have a great recipe which uses yoghurt and our soya-based one is actually really good!

Friday - Fish Pie

So to make it easier for my family, I became Flexitarian. I still prefer to eat fish of veggie instead of meat when it's just me, but if Flyfour or the children are cooking and they've picked a "meat" dish then that's fine by me, I'll eat because I'm not rude!

Anyway, they agreed that they'd eat this way too and yet they still complain whenever I serve fish that isn't battered... Oh well, I really fancy Fish Pie!
