Family Meals W/C 4th January 2019

So far, the first few days of 2020 have been great for the A Mother's Ramblings family. I mean, I know that I've been suffering from the after-effects of BPPV but we had Top Ender's Birthday (which was fabulous!), we've had a lot of family time and we've even given the house a bit of a sort out. It's like 2020 has given us all a new invigoration... either that or two weeks of not doing anything has finally reminded us that we aren't inherently lazy as I feared!

So, here's what we're eating this week!

Saturday - Pasta with Bacon and Mushrooms



Most of the family aren't going to be happy, but I'm not sure I care. I figure after a few days of feeling dizzy and sick, I should be allowed some of my favourite comfort foods! I'll serve it with homemade Garlic Bread and I've just decided I'm going to throw some spinach into the Pasta too.

Sunday - Roast Chicken


Top Ender had wanted a Roast for her special treat on her birthday but ultimately decided to go to TGI Friday's instead. The problem was I really wanted a Roast Chicken and so I thought it would be a perfect way to end our fast on the Sunday by sharing a beautiful Roast, with Fluffy Potatoes, vegetables and all the other amazing trimmings that we love such as stuffing, Yorkshire puddings, gravy and everything and anything else we can think of that we love!

Monday - Bubble and Squeak Waffles


It's back to school for the children and me, and I guess back to work for Flyfour too, (although he did also go last Thursday!), I'm actually really excited because I've missed going to work, I've missed the routine and I've missed my friends too!

Our meal tonight will be Bubble and Squeak Waffles from the leftovers of yesterday and I'll serve it with poached eggs.

Tuesday -  Chicken Noodles


We're off to Youth tonight and for the first time, Dan Jon will be coming too! We love noodles in our home, and if we get a chance we'd happily eat them morning, noon and night! So we'll use the leftover chicken from Sunday with the noodles and throw in some frozen veggies (peas and sweetcorn mainly!) and spring onion and anything else I have in the fridge to class them up.

Wednesday - Soup and Rolls


We're going to have a meal of Soup and Rolls (possibly made from the leftovers before I made the waffles on Monday!) and if the children are super lucky, I might grill some crispy bacon up and put it on top, because I'm cool like that.

Thursday - Shredded BBQ Chicken Burritos


Yeah, yeah, I'm using up the last of the chicken, mixing it with BBQ Sauce and calling it good before slapping it into some wraps with rice and saying it's a Burrito. Trust me when I say nobody will be complaining.

Well, Flyfour might as he's eating his over tortilla chips as I'm still to find a gluten-free wrap that tastes good!

Friday - Parmesan Crusted Baked Fish with Mini Jacket Potatoes


I decided to have some baked fish for our main meal today, and team it with mini roasted jacket potatoes, or rather just potatoes with their skins on that are going to be roasted! I'll serve it with spring greens and possibly some parsnips.

So that's what we are eating this week!
