What We're Eating W/C 24 October 2020

It is finally half term week and I'm super pleased!
It isn't because I want to have a week off, mainly because this week I'm going to work a little on a few projects I have planned at work, but because this week I plan on relaxing with my family, I plan on doing a fair bit of tidying in the garden and I have a huge pile of books I want to read!

So, here's what we're eating this week.

Curried Chicken and Rice - super yummy but not on the menu this week

Saturday - Lasagne

I used to think if I asked the children what they would like to eat, that it would be Top Ender that would pick Lasagne, but it is actually Dan Jon that is the BIG fan and asks every week if we have it on the menu. I can guarantee when he finally gets up today, he will be super excited!

Sunday - Layered Potato Chicken

Flyfour makes this amazing dish, with cider vinegar and onions and slices of layered potato and the chicken slowly roasts on top of the potatoes and fives a great flavour to the potatoes and a great base for the sauce that goes well with the rest of the meal.

And as I was craving it, I figured that he should make it!

Monday - Fish Finger Sandwiches

Top Ender is really great at making Fish Finger Sandwiches, and I was asking everyone to make one meal this week (well the children) and so I picked this for her as it is easy, quick and she'll indulge me by adding some avocado and a poached egg and slices of tomato and some lettuce etc.

I kinda want this now.

Tuesday - Pizza

Dan Jon is making Pizza for his Food Tech Homework. I'm rather excited as we make pizza a lot in our home and I'm pretty sure he's got some great skills and we'll have massive pizzas each... well apart from Flyfour as he isn't home tonight!

Wednesday - Jacket Potatoes

I'll put these on in the Slow cooker when I get up, and then we can eat them when we want in the early evening. There will be options of beans, tuna, cheese and probably knowing Top Ender some sweetcorn although I'll go for spring onion and mushrooms with my tuna!

Thursday - Salmon and... something

If it were up to me I'd have Salmon Stirfry, if it were up to Top Ender we'd have crispy potatoes, if it were up to Dan Jon we'd probably have no Salmon and wedges and if it were up to Flyfour we'd be having Nando's.

I guess I'll have to come up with a mix of everything to keep everyone happy.

Friday - Creamy Chicken and Rice

This is another slow cooker dish. I won't cook the rice in the slow cooker as although I like it mushy, the rest of the family aren't so keen (they also prefer crispy bacon, and I prefer it chewy!), but will add it to the dish once cooked (slightly under done!) so that the vegetables, the garlic, the rice and the chicken have time to blend together to make a creamy chicken "stodge" that will keep us all happy for the rest of the evening.

So that's what we are eating this week, how about you?!
