What We Are Eating W/C 9th September 2017

I can't believe how fast this past week has gone. I mean I know we were back to School and back to our almost normal routine, but it really has flown by! Luckily this week should take a bit longer to go past because we're used to the whole back to School thing and probably a bit bored of it. I'm also slowly trying to sort out the kitchen because it's nearly time for the refit!

Bye Bye old Kitchen, you've served me well!


Saturday - Nachos



Hopefully we will have eaten during the day when we go out with my Mum, but just in case we haven't I'm planning on making a meal which an easily be made larger for hungrier appetites, or lighter for just a snack.

I figured that Nachos was perfect for this, as we can top them with mince or chicken to make them more filling and "just" cheese if for a lighter snack.

Sunday - Roast Chicken


We're having a Roast Chicken today and sharing it with Flyfour's Mum. As normal Flyfour is bound to make way too much and we'll all roll to bed later in the evening after a pudding of Apple crumble.

Monday - Freezer Leftovers


Just like Flyfour and the Sunday Roasts, I can never make the right portion size either. I however don't overfill everyone's plates and freeze a portion or two for use at a later date. Tonight is that later date. We have Fish Pie, Risotto, Couscous and a couple of other meals to pick from. We'll also use up a few different half open packs that are in the freezer, like Gluten Free Onion Rings and Mozzarella sticks.

As you might have been able to guess, I'm trying to run down the freezer and food cupboards before the guys come to rip out my kitchen in a couple of weeks. 

Tuesday - Salmon Fish Cakes


I'm going to make some fish cakes with the frozen Salmon I have in the freezer and then I'm going to serve them with whatever veg is in the freezer and because I'm lovely and kind and my children have me wrapped around their finger, some butter french stick slices.

Wednesday - Soup and Toasties


This is such a quick and easy way to feed my family, I don't know why I don't do it more often. Of course, seeing as it has been the summer and this is more of a cold weather meal it might have something to do with it.

Thursday - Tuna Melts


Right, so tuna melts are basically tuna on bread with melted cheese on top right?

Well there you go then.

Friday - Cheeseburger Lasagne


I was watching The Goldbergs this week and one of the characters mentioned Cheeseburger Lasagne. I had to look it up and discovered that it is kinda a sloppy joe type thing and I was determined that we'd have it tonight as a family meal!
