What We Are Eating This Week (W/C 02/06)

I'm busy preparing the house for Summer, stocking up on essential Summer items (Ice Cubes, Ice Lolly's, Ice Cream Toppings etc) and slowly trying to switch from the comfort foods of winter to the lighter foods of summer. For me Summer was always Roast Chicken with Egg Fried Rice and a lot of Salad, I have many fond memories of my family and family friends sitting around the table in the garden eating, talking and drinking and I really fancy the meal too... Guess we'll be eating it this week then! Thank you too everyone for the kind get well wishes for my Mum. As soon as I have more news I'll let you know.

Saturday - Salmon Pasta with Apetina


Big Boy has seen this on the side of the Apetina packets that we have in the fridge and has asked if we could have it for dinner. He really loves the Apetina and Tops really loves Salmon so I think that it's going to be a fight over the leftovers! I'll serve it with a Salad again and have everyone help make it look pretty like the one I made for the Apetina post I did a few days back.

Sunday - Prawn Cocktail and Rack of Lamb with Trimmings


My Mum was supposed to be coming today, but due to her recent hospital visit with a suspected Mini Stroke which has turned out to be Bells Palsy, I'm not sure that she will be coming today. If she does then we will be having a Prawn Cocktail starter, and then a Rack of lamb done with Rosemary and Garlic. I'm going to do it French Tipped so I can bring it to the table looking pretty! If she doesn't come then there won't be any Prawn Cocktail starter. For pudding we'll be having some Angel Delight Ice Cream, especially as they just sent me a jelly mould of the Queen's Head!

Monday - Roast Chicken with Egg Fried Rice and Salad


I really hope that Monday has a little bit of sun as I always associate this meal with good weather (as I mentioned above) and I'm really looking forward to it! The Egg Fried Rice would have to be brought from a local Chinese Take Away to be like the ones I ate with my family, but I'm quite good at making Egg Fried Rice and as Daddy can't eat eggs, it would be easier to make rice and then reserve some for Daddy before making the rest Egg Fried. I've taken to putting a big bowl of Salad on the table when we are eating and just letting everyone serve themselves. This way I eat more salad and fill up on it and everyone else eats a little so can pretend to be healthy.

Tuesday - Indoor Jubilee Picnic


Today we are going to have a special Jubilee Picnic Tea. We love having picnic teas and we are going to make our own Sausage Rolls, Sandwiches, Cakes and Pineapple and Cheese on Sticks. I have no idea why we are having Cheese on sticks but that is what we are doing! I have an M&S voucher so we'll also be sneaking some biscuits and other treats into the basket too.

Wednesday - Eating Out at The Beefeater Grill


We were asked if we might like to do a review of the Beefeater Grill and we thought we would go during the  half term holiday as a special treat for Tops, BB, Daddy and I. We're not sure what we're going to eat but maybe it will be a Steak to please Daddy and I, some form of pasta for Top Ender and Big Boy doesn't care what he eats as long as he has chips!

Thursday - Twice Baked Jacket Potatoes


Last Monday I baked three times as many Jacket Potatoes as we needed. I used one third for dinner on the Monday, one third for wedges with the Tuesday meal of Turkey with Red Peppers, Cream Cheese and Spinach and I scooped the insides out of the last third mixed it up with the Red Peppers, Cream Cheese and Spinach mix (well half of that third the other half was carrot, Cheddar and Cream Cheese) and froze ready for a meal another week. As today Tops, BB and I are heading off to the Zoo with Thomson Family Resorts and Guinness World Records I thought they would be the easiest to cook when we got back!

Friday - Fake Take Away Curry


Last week Tops and BB both tried the Sausage Curry and loved it. BB ate it all covered in Tomato Ketchup, but he loved it and Tops wasn't that keen on the runny sauce, but loved the flavouring of the Sausages. This week I'm going to try again and make a Chicken Curry like our local Take Away and serve it with the Warburtons Naan Breads that were sent for us to try. I was going to try and make a pizza for lunch one day this week with them, but I think that Tops and BB will appreciate having something to mop up the sauce with instead.
